Vegetable Stock with chipotle

Microwave garlic cloves for 15 seconds to peel the skin easily

Ingredients:
· 1 onion
· Olive oil to taste
· 5 tomatoes
· 3 squashes cubed
· 1 can Chiles Chipotles Adobados (380g)
· 2 garlic cloves
· Black pepper and salt to taste
· 2 cup mushrooms sliced
· 2 epazote springs
· ½ cup fresh cheese
· 6 cups chicken stock

Procedure:

1. Mince tomatoes with chicken stock, chipotles San Marcos, garlic and half the onion.
2. Chop finely the other onion half and sautée in olive oil for some minutes. Add the mushrooms and squashes. Bring to the boil.
3. Add the mixture, epazote, salt and pepper to taste.
